Anniversary Chocolate Cake (Miss Pereira's Recipe frm Mrs. Ng)

a.
1 cup evaporeted milk
1 tablespoon vinegar
** Add vinegar to milk and set aside

b.
1 1/2 cup plain flour
1/2 cup cocoa powder
1 1/2 teaspoon bicarbonate of soda
pinch of salt
** Sift together and put in a bowl

c.
180 gm butter
** Melted

d.
4 eggs
1 cup castor sugar (it's okay to put less)


1. Pour melted butter and half of the soured milk and to the bowl (b). Add sugar and mix well.
2. Add in eggs, one at a time and mix well. Pour in the remaining milk.
3. Mix mixure well and pour mixture to a grease tin cake. Bake.

To make chocolate topping.
1. Melt one bar cooking chocolate and add in 1/2 cup milk and cook over a very low heat.
2. Add in 2 dessert spoon of icing sugar and 1 tablespoon butter.
3. When choclate has melt to a pouring consistency, pour over to the cooled cake that is already coated with jam.
4. Smooth choclate to cake sides and top.

Moist Chocolate Cake

a.
240 gm Van Houten cocoa powder
1 cup water
60 gm castor sugar
** Boil to thicken and then cool it.

b.
1 butter
360 gm castor sugar
** Cream until white

c.
5 eggs
2 tsp baking powder
1 1/2 tsp vanilla essence
2 table spoon evaporated milk
pinch of salt
250 gm flour
** Add in eggs (one at a time) to b. and mix till fluffy
** Add in the flour and baking powder
** Pour in a. to the mixture
** Add in salt, vanilla and milk, mix well.
** Pour mixture to a prepared greased cake tin and bake.

Almond Biscuit

1 kg plain flour
500 gm almond falkes
350 gm icing sugar (sift)
500 gm corn oil

1. Roast alond till slightly brown
2. Sift flour and icing sugar together.
3. Add corn oil to the sugar and flour and mix lightly.
4. Add in almond and mix.
5. Roll out (portion by portion) mixture (like a long but thicker sausage) and cut to make a round shape cookies.
Bake at 180 C for 15-20 mins.

Butter Cake (Resepi Asas)

Bahan :

1 butter
1 gula castor
6 biji telur A
2 gelas tepung naik sendiri
1 sudu kecil esen vanilla

Cara :
Pukul butter dan gula castor hingga kembang, masukkan telur, sebiji-biji hingga rata. Masukkan esen pilihan dan masukkan tepung yg telah diayak.

Masukkan dalam acuan dan bakar dalam oven yg telah dipanaskan.


Variasi :
Kek Oren - letak parutan kulit oren dan esen oren
Kek Kopi - letak satu sudu Nescafe dan esen kopi
Kek Marble - bahagikan adunan kepada beberapa bahagian dan letak pewarna.

Jem Manggis

2 gelas isi manggis
2 gelas gula pasir
1/2 gelas isi betik
1 camt air limau
sedikit halia muda

Cara :
Masukkan semua dalam kuali dan kacau pada api kecil hingga pekat. Masukkan air limau. Kacau lagi. Tutup api bila jem telah benar-benar likat.

Bangkit Kelapa

Bahannya :
1 mangkuk gula halus
1 mangkuk kelapa parut tanpa kulit ari, direndang sampai kering dan kuning sedikit.
2 mangkuk tepung ubi
3 biji telur
1 camca teh esen vanilla (saya letak esen pandan. zaman dulu2 ada esen vanilla jer)

Cara membuatnya:
1. Sediakan kelapa.
2. Dalam sebuah besen, campurkan tepung sagu, gula dan kelapa. Gaul rata.
3. Pukul telur dalam bekas lain dan letakkan esen vanilla.
4. Basahkan tepung dengan telur sedikit demi sedikit dan uli hingga jadi adunan yg boleh dicanai.
5. Canai dan terap dengan pencitak kesukaan anda.
6. Bakar hingga kuning.

Nota:
Kesukaan nenek saya, Allahyarham Hajjah Asmah Said. Nenek tak makan langsung butter/marjerin, jadi cuma boleh makan bangkit sahajalah. Al-Fatihah buat nendaku.

Nestum Biscuit

4 cups nestum
1 1/2 cup castor sugar
1 cup peanuts (fried and pound)
1 cup flour]
1/2 taspoon baking powder]sift together
4 egg yolks
8 oz butter

Method :
1. Beat butter and sugar
2. Add in eggs, mixed well.
3. Add in flour, peanuts and nestum and form a dough.
4. Shape into small balls and bake.
